Hey guys!
So if you read my post last week about Whole 30, you know I have been at it for a week now. (If you haven’t read it yet, you can check it out HERE.) Let me just say.. it has been a STRUGGLE. The first time I successfully stuck with it, I was single and it was so much easier to maintain. Now, there is soo much temptation sharing a house with someone else around that it’s pretty difficult to stick with. I didn’t eat perfectly last week (I would say about 85% Whole 30 compliant), but I am pretty content with the choices that I did make all things considered.
I ate a ton of fruit (grapes, apples, strawberries, bananas) last week. And almond butter is seriously my best friend when I’m eating healthy. Not quite as good as peanut butter, but it’ll do. I use it a lot to eat with fruit and melting it over grapes and bananas is soo good. Almonds are an excellent substitute when you’re eating right (I use almond flour in a ton of recipes instead of regular flour) and they make a great filling snack as well. Lara Bars are a lifesaver too when you need something on the go without cheating on your diet. My personal faves are Pecan Pie and Coconut Cream Pie.
We had Mike’s parents over for dinner one night last week so we whipped up some turkey tacos for dinner which I made with Whole 30 compliant seasoning. His parents raved over it and I have to say it is one of my favorite meals. You can easily make it compliant by just having a turkey taco bowl with tomato and avocado or guacamole. I went out to eat one night, but I didn’t let this keep me from making healthy choices. I opted for a turkey burger (no bun) with tomato and avocado and sweet potato fries on the side and omg it was delicious. I did go out to eat another night as well, but passed on an appetizer and had chicken tacos (I know, not the greatest option, but it could have been worse).

- Whole 30 approved “Pulled Pork”
- Italian Almond Crusted Salmon
- Lemon Pepper Chicken
I’ve been really working on my mindset as far as reminding myself that healthy food doesn’t have to “taste bad” and be boring and just trying to be very aware of everything I consume. Pinterest is such an amazing resource and I have so many recipes saved that I can’t wait to try. I realize it’s all about making small changes every day and just consistently trying harder to be better than I was the day before. I don’t care about being skinny; I care about being healthy and living my best possible life.
As far as physical changes, I have noticed I don’t feel so bloated and my jeans are fitting a little better so far. I’m not really focused on a number on the scale so I won’t be weighing in until my 30 days are up. Overall, I feel a little better and I’m excited to keep going and to push harder this week!
